Mex up your mid week meals with these flavoursome pulled chicken tostadas. Easy to assemble but hard to stop at just one.

2 tablespoons olive oil
2 cloves garlic, minced
3 tablespoons smoked paprika
2 teaspoons cayenne pepper
1 teaspoon salt
1kg chicken thigh fillets, quartered
1 onion, chopped
1½ cups chicken stock
½ cup bbq sauce
10 small tortillas, cut into 10cm rounds
Vegetable oil spray
Coleslaw
¼ white cabbage, thinly sliced
¼ red cabbage, thinly sliced
