Christmas in our home was an exciting time with endless fuss in the kitchen and with some staple dishes on the menu:  Turkey stuffed with risotto of turkey giblets, wild mushrooms and herbs baked on a “bed” of sauerkraut seasoned with smoked paprika; Russian Salad Olivier; Fortune Banitza – filo pastry with Bulgarian feta (brined sheep cheese) with fortune wishes inside; and of course – our own baklava “The Star of Bethlehem”.
