Pineapple, Coconut and Ginger Beer Cooler

This little cocktail will take you to the tropics in no time. Refreshing sweet pineapple with the burst of fiery ginger beer to, a squeeze of lime it’s a tropical delight. Barbados did you say? And you can tell all your friends it’s healthy because it has coconut water in it!

Preparation time: 20 minutes + 12 hours to macerate

Serves 8

Ingredients
½ pineapple, peeled, trimmed and cut into 24 ‘swizzle sticks’
2 tablespoons coconut liqueur
extra, 2/3 cup coconut liqueur, chilled
2 cups coconut water, chilled
1 litre ginger beer, chilled
lime slices, to serve
mint leaves, to serve
ice, to serve

Method
1. Combine the pineapple ‘swizzle’ sticks and 2 tablespoons of coconut liqueur in a non-reactive container and macerate the pineapple in the refrigerator over night.
2. Combine the extra coconut liqueur, coconut water and ginger beer in a tall jug, stir to combine.
3. Place 3 pineapple ‘swizzle’ sticks in each serving glass, add lime slices, mint leaves and ice cubes, pour over the coconut and ginger beer drink.
