Ingredients
8 organic lemons, thick skinned
2 cups vodka
1 cup castor sugar
1 cup water

Method

Wash lemons in warm water to remove any loose particles.
2 Using a vegetable peeler, carefully remove zest without any pith. The pith makes the limoncello bitter.
3 In a medium bowl, combine lemon peel and sugar. Using a wooden spoon, crush together until peel is covered in sugar. Cover and stand for 1 hour.
4 In a large jar, place lemon peel mixture. Cover with vodka and shake to combine. Shake daily until sugar is dissolved and desired taste is achieved.
5 When ready, strain peel and decant into a sterilised bottle.
6 Store in fridge.
