Watermelon Strawberry Cooler

Sugar and spice and all things nice, in one gorgeous cocktail.

Ingredients
¼ watermelon, cubed
250g strawberries, hulled
90mls Deviant Distillery moonshine,  or white rum
½ cup sugar syrup
1/3 cup fresh lime juice, plus limes to serve
Mint leaves, to serve

Method
1 In a blender, combine watermelon, strawberries, lime juice and some ice.
2 Add sugar syrup.
3 Strain juice and divide between glasses. Add ice, mint leaves and a squeeze of lime. Serve.

Sugar syrup
In a medium saucepan, add equal quantities of castor sugar and water. Bring to a boil, and then reduce to a simmer, stirring occasionally until sugar is completely dissolved.
For a thicker syrup simmer for longer.
Will keep refrigerated for 2 weeks.
